Slow cooker mashed potatoes are rich, creamy, and delicious. This recipe does not require boiling; just simply add cut potatoes, chicken broth, and seasonings. Then allow the slow cooker to do the cooking.

It is an easy side dish for Thanksgiving dinner and holiday meals.

Ingredients

You will need the following ingredients to make creamy slow cooker mashed potatoes.

  • Yukon Gold Potatoes- Yukon Gold potatoes are perfect for cooking mashed potatoes in the crockpot because they are naturally buttery and creamy. They also do not absorb liquid as much as other potatoes, preventing them from becoming overcooked and mushy. Russet potatoes are another great choice for creamy potatoes, however they absorb liquid easier, and can become mushy if overcooked. If you choose Russet potatoes, keep a careful watch on them as they cooked to prevent overcooking. Red potatoes are also tasty, however they can become gluey if over-mashed.
  • chicken broth- Chicken broth adds flavor. You can substitute with water.
  • salt
  • butter-Use real butter. Do not substitute with margarine. You can use salted or unsalted butter.
  • heavy whipping cream- Heavy whipping cream creates the reach, smooth, creamy texture. You can substitute with half and half or whole milk. However, they will not be as rich and creamy.

Steps

Follow these simple steps to make crockpot mashed potatoes.

  1. Peel Yukon Gold potatoes and cut into quarters.
  2. Add potatoes in the slow cooker. Add chicken broth and salt. Cook on high 2 ½ to 3 hours or low 4 to 5 hours. Cooking time will vary depending on your slow cooker. Check potatoes periodically. Potatoes should be cooked through and fork tender.
  3. Remove the lid. If there is any remaining broth at the bottom of the crockpot, carefully drain the liquid. Add butter and heavy cream.
  4. Mash the potatoes with an electric mixer or potato masher until lumps are gone and potatoes are rich and creamy. Salt and pepper to taste.

How to store leftover mashed potatoes

Mashed potatoes can be stored in the refrigerator in an airtight container for up to 4 days.

You can reheat leftovers in the microwave, stove top, or slow cooker.

While you can freeze leftovers, it is not recommended. The texture will become mushy and watery when reheating.
